Turkey Meatloaf

Pre-heat oven to 350 degrees. Toss bread with broth and wine in a large bowl. Let stand until bread absobs broth and softens, about 10 minutes. Mix in mushrooms, eggs, shallots, parsley, salt, pepper, and olive oil.

Add turkey; mix just until blended. Transfer to a 8 1/2 x 4 1/2 loaf pan, mounding in center. Bake until thermometer registers 170 degrees about 1 hour 45 minutes. Let rest 5-15 minutes before serving.
