Put the innards from the turkey in a pot of water, salt and pepper. Cover and simmer for an hour. Toss innards, save 2 cups of the liquid. Saute onions and celery in butter. Throw in breadcrumbs, apples and pecans. Add 2 cups of turkey broth. Bake at 400 degrees in a 9x13 25 minutes covered. Uncovered for another 15 minutes.
